From February 17 to 22, the Executive Chef of the Hotel de Russie, Nazzareno Menghini, gives his "kingdom" over to the local regional cuisine. He will host the most brilliant and creative representatives of Latium cuisine, Salvatore Tassa, Chef of the well known restaurant "Le Colline Ciociare", or "The Ciociaria Region Hills", located in Acuto, and his assistants.
The legendary Hotel de Russie hosts the talented Salvatore Tassa who, with help from his wife Assunta, creates dishes that enhance the value of the typical products from Latium. Mr. Tassa proposes such specialties as "onion fondue", "crunchy polenta cream horns with sheep ricotta cheese, fried artichoke and pork cheek in red turnip sauce, and pumpkin ice cream", "Parmesan fondue with essential orange oil and light duck stock", and a delicious "little chocolate cake with tangerine sorbet".
Salvatore's attentive and balanced cuisine amazes and seduces with flavors that are at times mutable. This event is paired with a wine list selected by "Le Vigne del Lazio" ("The Vineyards from Latium"), an association representing 18 local producers and about 40 different labels, all of them available for tasting.
