Cantolio, Cantina ed Oleificio Sociale di ManduriaAugust 2006 Company of the Month takes us to the heel of the Italian boot, in Manduria, the heart of the Primitivo natives vine in the Apulia region. Here the Cantina CantOlio, whose full name is Cantina ed Oleificio Sociale di Manduria, has its headquarter. The cooperative was founded in the early 1960 by a small group of local peasants.

Primitivo Vines

Ptimitivo GrapesThe Cantina CantOlio was established to produce wine from small Primitivo vineyards owned and cultivated by the founding members in an area known as the "Marina". The soil composition and the micro-climate of the small parcels of land were particularly favorable to the production of high quality grapes.

Currently the cooperative counts around 1000 vintner members and continues the production of Primitivo di Manduria wine. Part of the grapes still comes from the "Marina" growing area, while others are grown in traditional "alberello" (little tree) vineyards cultivated in fields exposed to the torrid sun of the southern Apulia plain, but mellowed by the beneficial influence of the Mare Jonio, that is, the part of the Mediterranean which wraps around the heel and point of the Italian boot.

The Primitivo grape has the same DNA as California Zinfandel. In addition, DNA studies conducted in Italy by the Istituto Sperimentale per la Viticoltura (Italian Experimental Viticultural Institute), and in the US at the University of California at Davis, proved that the DNA is shared by the Croatian grape Crljenaki as well. Another Croatian vine which shows similar characteristics, the Plavac Mali, was recently proved to be the result of crossbreeding between California Zinfandel and Dobricic, another Croatian vine, (Maletic E. et al. 2002)  
   

To improve the quality of the wine produced, in recent years the Cantina CantOlio has made conspicuous investments to improve the technology in the winery, and at the same time made available to the associated vintners a team of capable technicians who assists and advise them in the vineyards. in addition, the group has improved the service to the public opening a new, welcoming direct sales center which includes automatic distributors that make it easier to sell bulk wine in demijohn.

The Primitivo grapes crushed by the winery account for 60% of the total. The Negroamaro, another Apulia native vine, makes up 30%, while the remaining 10% is local Malvasia. Around 20% of the wine produced is bottled by the winery with its own label, 30% is sold locally to consumers for their own use, and the remaining 50% is sold to other winemakers.

The consistent quality of the wines produced by the Cantina CantOlio carved a space in the national market for themselves and, more recently, expanded their reach abroad, especially in Germany, Switzerland, Australia and United States.

The Wines

  • Le Baccanti – Primitivo di Manduria DOC
    Made with Primitivo grapes from 10 to 30 years old vines cultivated 'a spalliera' (shoulder-style) on mostly clay soil. After maceration in temperature-controlled glass-coated cement vats until the sugar content is below 15-30 gram-per-liter at the fermentation temperature of 27°-30°C (80.6°-86°F,) the wine is left to rest partly in iron and partly in cement vats and recombined before bottling.

    The wine has red color with purplish highlights, has intense, characteristic perfume and pairs naturally with Mediterranean recipes.

  • Arthas – Primitivo di Manduria DOC
    The Primitivo vineyards that produce these grapes are 30 to 50 year-old and are grown on a clay-y soil using the alberello pugliese (little Apulian tree) method.

    After maceration in temperature-controlled glass-coated cement vats until the sugar content is below 15-20 grams per liter at the fermentation temperature of 27°-30°C (80.6°-86°F,) the wine is left to rest partly in iron and partly in cement vats then recombined before bottling.

    The wine has red color with purplish highlights, has intense, characteristic perfume and pairs naturally with Mediterranean recipes.

  • Mandonion – Primitivo di Manduria DOC
    Primitivo vines 30 to 50 years old cultivated in sandy soil using the alberello pugliese (little Apulian tree) method, produce the grapes used for this wine. After maceration in temperature-controlled glass-coated cement vats until the sugar content is below 15-30 grams per liter at the fermentation temperature of 27°-30°C (80.6°-86°F,) the wine is stored partly in glass-coated cement vats, partly in French and American oak barriques, and partly in iron vats, assembling it before bottling.

    Wild berry perfume hits the nose and it is of an intense red color. This wine is a perfect pair to Mediterranean cuisine recipes.

  • Opis – Negroamaro, Cabernet, Primitivo
    Produced with 40% Negroamaro, 30% Cabernet and 30% Primitivo grapes cultivated in the Manduria wine zone.

    This wine has intense red color and a pleasant fruity perfume. The alcohol content is 13% and pairs well recipes from the typical Mediterranean cuisine.

  • Abeterno – Primitivo di Manduria DOC
    Dessert wine made with Primitivo grapes from 30 to 50 years old vines cultivated in sandy soil using the alberello pugliese (little Apulian tree) method. After maceration in temperature-controlled glass-coated cement vats until the sugar content is below 80-100 grams per liter at the fermentation temperature of 27°-30°C (80.6°-86°F,) the wine is stored partly in French and American oak barriques, partly in glass coated cement vats, and partly in iron vats, assembling it before bottling.

    Intense red in color, the wine has strawberry and wild berry perfume. Pairs well with meat dishes and aged cheese.
